Info: The cascabel is also known as the little rattle which refers to not only the shape of this chilli but also to the sound of the seeds when shaken. The flavour is almost earthy, with tobacco and nut notes and a hint of acidic and smoky undertones. If you dry roast them first the nuttiness will become more pronounced which goes well with any tomato dish or tomatillos. Often used in conjunction with other chillies, especially chipotle.
